Fungi to look forward to

This spring, we inoculated logs leftover from our small clearing project with Shiitake and Oyster mushroom sawdust spawn.  The process is simple:  cut fresh logs into similar lengths, drill holes into the logs, inject spawn into holes, and then seal with cheese wax.  While the process is easy to understand, it can be quite time consuming.  Under the right conditions, we will have fresh, organic mushrooms by next spring with several flushes to come for years.  Plans to expand this operation are already in the works for next year.
